Sweet Potato & Goat Cheese Croquette Bites

Think crispy on the outside, creamy on the inside, and bursting with flavor. These bites are perfect as an appetizer, side dish, or snack, and they’re a little unexpected compared to typical fried foods.


🛒 Ingredients

  • 2 medium sweet potatoes, peeled and cubed
  • ½ cup crumbled goat cheese
  • ¼ cup panko breadcrumbs (plus more for coating)
  • 1 egg, beaten
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • Salt and black pepper to taste
  • Olive oil (for frying or baking)
  • Fresh herbs (optional: thyme or parsley for garnish)

🔪 Instructions

1. Cook the Sweet Potatoes

Boil or steam until tender (about 15 minutes). Drain and mash until smooth. Let cool slightly.

2. Mix the Filling

In a bowl, combine mashed sweet potatoes, goat cheese, paprika, garlic powder, salt, and pepper. Form small bite-sized balls (1–2 inches).

3. Coat the Croquettes

Roll each ball in a bit of beaten egg, then coat with panko breadcrumbs for extra crunch.

4. Fry or Bake

  • Fry: Heat olive oil in a skillet over medium heat, fry until golden brown on all sides.
  • Bake: Place on a parchment-lined baking sheet, drizzle lightly with olive oil, and bake at 400°F (205°C) for 15–20 minutes, turning once.

5. Serve

Sprinkle with fresh herbs and a little extra salt. Serve with a dipping sauce like honey mustard, spicy aioli, or balsamic glaze.
