Mediterranean Chickpea Wrap

A protein-packed, vibrant wrap that’s perfect for lunch on the go. Crunchy veggies, creamy hummus, and flavorful chickpeas make it satisfying without being heavy.


🛒 Ingredients (serves 1–2)

  • 1 large whole wheat tortilla or flatbread
  • ½ cup cooked or canned chickpeas, drained and rinsed
  • 2 tbsp olive oil
  • ½ tsp smoked paprika
  • ¼ tsp garlic powder
  • Salt & pepper to taste
  • ¼ cup crumbled feta cheese
  • ¼ cup diced cucumber
  • ¼ cup diced red bell pepper
  • Handful of baby spinach or arugula
  • 2 tbsp hummus (any flavor you like)
  • Optional: olives, roasted red peppers, or sun-dried tomatoes

🔪 Instructions

1. Roast the Chickpeas

Toss chickpeas with olive oil, smoked paprika, garlic powder, salt, and pepper. Heat in a skillet over medium heat for 5–7 minutes until slightly crispy.

2. Prepare the Wrap

Spread hummus evenly over the tortilla. Layer spinach, cucumber, bell pepper, and any additional veggies. Add roasted chickpeas on top, then sprinkle with feta cheese.

3. Roll and Serve

Fold the sides in, roll tightly, and cut in half. Serve immediately, or wrap in foil for lunch on the go.
